Target Bhurak first and use a missile immediately... the only time I use missiles on a Salthi (unless Im getting swamped).
And as for escort tactics, I think it depends on the ship youre flying. If youre in something that you can rip off an entire capacitor at once (the Raptor is my favorite for this, and if you can hold a bead the Scim isnt bad either) just get a good angle and hold the trigger, and watch a kitty go splat. By the time youve got another target, youve got a full guncharge again. In the Rapier, you have the punch to let two bursts go and nail some shields, then find another target. It takes a while, but they wont work the transports, and youll start to get a couple. When theyre down to one or two, you can spend more time trying to kill a fighter, but dont get too focused. In a Hornet (bah!) you have some major problems. Dont have the punch to rip off a couple shots, and only one seeking missile. Save your missiles for the heavies, and kill as fast as possible. However, make sure theyre dead or fleeing before going on to the next - if you let them go without major armor damage, the energy wasted killing their shields was for nothing.
Also, if youre 'burning from place to place, use taps on the burner, hitting it just as your speed starts to fall from max, and letting go immediately. You'll use a lot less fuel, and stay at or near top speed for a lot longer. This also works well in combat, because the point they need to aim for is jumping around quite a bit, and if timed correctly means that unless they're real close they arent going to hit you. Just watch out for people crossing in front - ive died more times like that than from enemy fire.
