That was George Carlin but the "on-camera" hands are none other than Stevie Salas, who composed all the guitar work.

^ I didn't know that, at first I was disappointed as I always loved George Carlin as a comedian (RIP) and I'd hoped he was really playing that guitar -- but after some Googling, seems Salas is a superb musician.
