Well, don't expect us to provide a precise list of what files are needed for which ship, that would simply be too time-consuming.
However, there is, I suppose, a relatively simple way of doing what you're asking. It would still be time-consuming, but only for you, so I don't mind

Basically, take the ship file from \ships in ueshipsX.tre for whatever ship you're trying to import into SO, and try to run the game with it (of course, you'll need to get the game to actually use the ship, for example by using the ship swapping tool in the ship editor to replace one of the existing SO ships). The game will, of course, crash - it will tell you that it's missing the mesh file. So, you take the mesh file from \mesh in ueshipsX.tre, and put it into the game. Run it again, and naturally, it will crash again, complaining about a missing texture file. Take the texture file from \mat in ueshipsX.tre, and put it into the game. Run it again - at this point, depending on which ship we're talking about, the game might run, or it will crash complaining about another missing texture file (and in some cases, more missing mesh files). If this happens, simply repeat the process until the game is happy.
