Looks like a pretty awesome build so far. Engine units are going to have to be relatively heavy to move the center of mass back far enough to give it pitch stability. Yaw stability might also be tricky.

EDIT: Never mind; the mass needs to be forward, not aft. Must've been asleep when I wrote that.

Yes. When it manages to reach escape velocity, that's usually considered sufficient. Then they start worrying about re-entry capabilities :).

Different mentalities in commercial aviation vs defense. For non military jets, you generally want to give something the lowest feasible thrust in order to maximize efficiency and range. :)
